Asian Pork Lettuce Wraps

Healthy, easy to make lunch or dinner meal.
Ingredients:
1 head lettuce 2 pounds ground pork (or beef) 1/2 yellow onion (diced) 1 1/4 cups shredded carrots 2 tablespoons ginger (grated) 2 tablespoons garlic (minced) 2 tablespoons olive oil 3 green onions (chopped with the white bottoms separated from the green tops) 1/2 cup hoisin sauce 2 tablespoons soy sauce 1 tablespoon rice wine vinegar 1 tablespoon Sriracha sauce 1 tablespoon sesame oil cilantro shredded carrots
Directions:
1. In a pan, heat olive oil and then add garlic and yellow onion until they’re translucent. Continue stirring so they don’t burn.
2. Add the ginger and cook an additional 2 minutes. Add the pork and brown.
3. While the pork cooks and in a separate bowl combine the hoisin sauce, sesame oil, rice wine vinegar, Sriracha, soy sauce and the white bottoms from the green onions. Whisk it all to combine.
4. Wash and dry your lettuce leaves.
5. Once the pork has cooked through drain the excess grease and add the carrots.
6. Add the sauce and cook for another five minutes.
7. Scoop pork into lettuce leaves. Add additional raw carrots, tops from the green onions and cilantro.
