Cucumber and Tomato Salad

This recipe makes for a quick and healthy salad that pairs well with anything.

Ingredients
4 English or seedless cucumber, diced 2-3 vine-ripe tomatoes, diced Handful flat-leaf parsley, chopped 1 medium red onion, chopped (I used a yellow one) 2 tablespoons red wine vinegar, a couple of splashes 3 tablespoons extra-virgin olive oil (eyeball it) Salt and pepper
Instructions
1. Finely dice all of the ingredients.
2. If onions are potent put in a bowl with heavily salted water to tone down the flavor.
3. Drain water and add onions back in with the rest of the mix
4. Combine all ingredients in a bowl and dress with vinegar, salt, and pepper, to your preference
